This time of year if all goes to plan you might find yourself with a glut of courgettes from your garden or allotment. Read on for Jenny’s two favourite recipes, Cheesy Courgette Fritters and Courgette Ribbons with Feta Cheese, made with veg and herbs from her own Great Grow Your Own Competition patch.
Millbrook top tip! Pick courgettes when they are smaller, around 10-12.5cm for the best flavour. The flowers and leaves are also edible and are delicious added to Summer salads.
Jenny’s Cheesy Courgette Fritters
2 medium courgettes
2 medium eggs
100g plain flour
200g cheese
Fresh parsley
Fresh dill
1 garlic clove
Salt and pepper
Method:
- Grate the courgettes and cheese.
- Finely chop the herbs and garlic.
- Put all the ingredients in a bowl and mix together.
- Make small balls and flatten into fritters. Either fry in oil, cook in the air fryer or oven bake until golden.
Jenny’s Courgette Ribbons with Feta Cheese
1 medium courgette
Block of feta cheese
Olive oil
Fresh dill
Pomegranate seeds
Salt and pepper
Method:
- Slice the courgette into ribbons.
- Cube the feta cheese.
- Finely chop the dill.
- Put into a bowl add the pomegranate seeds, salt and pepper drizzle with olive oil and enjoy.
